- 6 cups of spinach
- 1/4 cup of green onion
- 8 eggs
- 5 slices of beef bacon
- 1/4 cup of vinegar
- 2 tablespoons of sugar
- 2 tablespoons of water
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
steps
- place eggs in a small saucepan, just covering the eggs with water, and bring them to a boil and cook for 17 minutes on medium high heat.
- put the eggs under running cold water for 2 minutes. then remove the shell. rinse the eggs in cold water after. slice eggs into quarters.
- chop the green onions and beef bacon into small pieces.
- combine spinach, onions, and eggs in a large salad bowl.
- cook beef bacon in a skillet until crispy, then remove and drain on paper towels.
- leave 3 tablespoons of beef bacon grease in the skillet.
- add vinegar, water, sugar, salt, and pepper to bacon grease. heat mixture to boiling and stir to blend.
- sprinkle beef bacon on top of salad.
- serve hot immediately, pour over spinach mixture and toss salad gently.
