Ingredients
- 6 Cups of Spinach
- 1/4 Cup of Green Onion
- 8 Eggs
- 5 Slices of Beef Bacon
- 1/4 Cup of Vinegar
- 2 Tablespoons of Sugar
- 2 Tablespoons of Water
- 1/2 Teaspoon of Salt
- 1/2 Teaspoon of Pepper
Steps
- Place eggs in a small saucepan, just covering the eggs with water, and bring them to a boil and cook for 17 minutes on medium high heat.
- Put the eggs under running cold water for 2 minutes. Then remove the shell. Rinse the eggs in cold water after. Slice eggs into quarters.
- Chop the green onions and beef bacon into small pieces.
- Combine spinach, onions, and eggs in a large salad bowl.
- Cook beef bacon in a skillet until crispy, then remove and drain on paper towels.
- Leave 3 tablespoons of beef bacon grease in the skillet.
- Add vinegar, water, sugar, salt, and pepper to bacon grease. Heat mixture to boiling and stir to blend.
- Sprinkle beef bacon on top of salad.
- Serve hot immediately, pour over spinach mixture and toss salad gently.
