  1. Place eggs in a small saucepan, just covering the eggs with water, and bring them to a boil and cook for 17 minutes on medium high heat.
  2. Put the eggs under running cold water for 2 minutes. Then remove the shell. Rinse the eggs in cold water after. Slice eggs into quarters.
  3. Chop the green onions and beef bacon into small pieces.
  4. Combine spinach, onions, and eggs in a large salad bowl.
  5. Cook beef bacon in a skillet until crispy, then remove and drain on paper towels.
  6. Leave 3 tablespoons of beef bacon grease in the skillet.
  7. Add vinegar, water, sugar, salt, and pepper to bacon grease. Heat mixture to boiling and stir to blend.
  8. Sprinkle beef bacon on top of salad.
  9. Serve hot immediately, pour over spinach mixture and toss salad gently.
